Choc Protein Brownies Recipe

One of our lovely sponsored athlete’s Ellie Dawson (follow her on Insta here: @ellie_dawson) from the Gold Coast has so kindly shared with us her secret protein packed chocolate brownie recipe! We’re so excited to share it with you all. Let us know what other recipes you’d like to see!

Ingredients:

  • 15 g Gold Standard Whey Protein Powder, Double Rich Choc or other chocolate protein powder from Muscle Coach
  • 100g pumpkin, steamed and mashed
  • 20g natural peanut butter
  • 40g oats (rolled or quick)
  • 30g natural cocoa powder
  • 125g egg whites
  • 50g chickpeas, drained
  • 250g black beans, drained
  • 2 whole eggs
  • 25g natural coconut flour
  • Stevia to taste (decent amount)
  • Dash of vanilla essence
  • Pinch of salt and baking powder
  • Chocolate chips, nuts, dried fruit (optional)

Method: 

Preheat oven to 180 degrees celsius.

Spray a brownie tray with olive oil spray.

In a food processor or blender, blend all of the ingredients besides the baking powder.

Add the baking powder to mixture last and stir in with a spoon.

Make sure the mixture is completely smooth and all of the beans are blended/broken down.

Pour into tray and bake for approx 20 mins (or until skewer comes out clean from the centre).

Let it cool before removing from the tin. Cut into even squares and ice the brownies with chocolate PB2! Enjoy!
